Vegan Apple Cinnamon Coffee Cake

Ingredients
Dry ingredients:3 cups all-purpose flour1 tablespoon baking powder1 teaspoon baking soda1 teaspoon cinnamon1/4 teaspoon saltWet ingredients:1-1/4 cups soy milk (or other non-dairy milk)1 cup unsweetened applesauce1/2 cup brown sugar1/2 cup granulated sugar1/2 cup Earth Balance (or other vegan margarine), meltedTopping:1/3 cup brown sugar1/3 cup granulated sugar1 tablespoon cinnamon1 tablespoon Earth Balance (or other vegan margarine)
Directions
Preheat your oven to 350 F. Oil a 9x13 in baking pan. In a large bowl, mix together the dry ingredients. In a medium bowl, mix together the wet ingredients. In a small bowl, mix together the topping until it has a crumbly consistency. Add the wet to the dry and stir until fully mixed. Pour into prepared pan and sprinkle the topping over it evenly. Bake for 1 hour or until the cake is set. Serve with hot coffee.
