Eve's eggplant pizza

Ingredients
Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb ) Cheddar or Colby Cheese, Low Fat, 8 oz Parmesan Cheese, grated, 2 oz Feta Cheese, 2 oz *Muir Glen Organic Chunky Tomato & Herb Sauce, 0.5 cup Black Olives, 12 jumbo Salt, 1 tbsp Olive Oil, 1 tbsp Chicken Breast, no skin, 3 ounces (remove)
Directions
cut rinse and salt eggplant. pierce eggplant slices. let sit and breathe for 10 minutes on paper towels. spray with olive oil on both sides and bake at 350 degrees for 10 min. flip and bake on other side for 10 minutes. add toppings , then bake for the last 10 minutes.
