Crustless Quiche

Olive oil, 2 tsp. Broccoli, fresh, 2.5 cup, chopped and steamed (or other green veggie like spinach cooked, squeezed and chopped) Red Ripe Tomatoes, 1 medium chopped Mushrooms, fresh, 2 cup, pieces or slices Garlic powder, 1 tbsp Egg, fresh, 2 large egg white, fresh, 2 large (remove) Milk, whole 0.5 cup (remove) Cheese; Lite 3 Cheese Blend (Trader Joe's), 1 cup (4 oz) Salt and fresh ground pepper
- Saute veggies in olive oil and season with garlic powder, salt and pepper.
- Whisk together milk, eggs and egg whites, salt and pepper.
- Spray 9-inch pyrex dish with cooking spray. Put half the veggies in, top with most of the cheese (save 1/4 cup) and then cover with remaining veggies
- Pour egg mixture over veggies
- Bake at 400 degrees for 25 minutes
-Top with remaining cheese and bake for another 5 minutes or until cheese is melted and golden
- Allow quiche to set for at least 5 minutes before cutting and serving.
Serving Size: Makes 2 large servings -- each are half a 9-inch pie dish
