Sweet Ginger Baked Tofu

Ingredients
1 lb extra firm tofu1/4 cup soy sauce1/4 cup vinegar1/4 cup apple juice2 Tbsp sesame or olive oil2 Tbsp honey1 small clove garlic, minced1 1/2 Tbsp minced fresh ginger
Directions
Preheat oven to 375
Drain tofu and cut 1/2 inch thick
Mix other ingredients
Bake for 30 minutes.
Cut into cubes. Serve skewered or on top of salad.
