Christy's Barbecue Beef

Ingredients
3 pounds chuck roast, London broil, or leaner cut beefSauce:1 Tbsp. butter1/2 cup finely chopped onion1 Tbsp. apple cider vinegar1 Tbsp. brown sugar2 Tbsp. lemon juice1/2-3/4 cup ketchup1 1/2 Tbsp. Worcestershire sauce1/4 teaspoon dry mustard (or substitute 1 Tbsp. prepared mustard)1/2 cup meat broth or water1/4 cup chopped celerySalt to taste
Directions
Brown the roast in a small amount of oil in a skillet, then cook in a slow cooker until it easily shreds.

Melt butter in a very large saucepan or cooker. Add onion and saute in the butter. Add all the other ingredients and simmer to blend flavors (20-30 minutes) Stir the shredded beef into the sauce; turn the heat to low to let it all to heat through and absorb the sauce.
