Malta-Inspired Red-Sauce

1.5 lb tri-tip2 Tbsp chopped garlic1/2 Tbsp Worcestershire sauce3.75 lbs tomatoes, cored and chopped1/4 c. fresh basil1 Tbsp fresh oregano1.5 tsp sea salt1 cup red wine
Slice the tri-tip into bite-sized pieces. Brown in a pot with the chopped garlic and Worcestershire sauce. Add about half a cup of the red wine, and simmer about 5 minutes. Remove meat from pot, leaving the liquid behind.
Add the tomatoes to the pot, followed by the herbs and half the salt. Let simmer for 20 minutes, then remove from heat and use an immersion blender to puree the sauce. Add the meat, the rest of the wine, and the rest of the salt (if needed), and simmer on low for 2-3 hours, or until it is reduced to 6 cups.
Serve over your choice of pasta, with squash or steamed veggies on the side.
