Protein Banana Bread

2 ripe bananas1 Cup oat flour2 scoops of vanilla protein powder1 Cup nonfat Greek yogurt3 egg whites1/4 Cup unsweetened applesauce6-8 packets of Splenda (or equivalent)2 tsp vanilla extract1 tsp baking sodaPinch of salt1/2 Cup chopped walnuts (optional)
*Preheat oven to 375 degrees.
*Mash bananas in mixing bowl to a pudding-like textures.
*Add all remaining ingredients (except nuts) and mix well.
*Carefully fold nuts into batter.
*Prepare 8 x 8 inch baking dish with nonstick spray.
*Place batter in dish evenly and bak 30-40 minutes or until center is completely cooked.
*Cut into 12 squares when cooled.
Serving Size: Makes 12 squares, 3 squares per serving
