Easy White Bean Chicken Chili

Ingredients
McCormick White Chicken Chili Seasoning Mix, 1 packetOlive Oil, 1 tbsp 2 Chicken Breasts, no skin, 1/2 lb (cut into 1/2 inch cubes)Water, tap, 1 cupNorthern Beans or Navy Beans (white beans), 15 oz canGreen chilles 4 oz can (optional)
Directions
1. Heat oil in skillet on medium heat. Add chicken; cook and stir 3 to 5 minutes or until no longer pink.

2. Stir in Seasoning Mix, water and beans. Bring to boil; cover. Reduce heat and simmer 10 minutes, stirring occasionally. Serve with toppings, if desired.

This makes 2 1-cup servings

I usually double the beans, water and seasoning for a bigger batch.


Suggested toppings:
Shredded Cheese, Sliced Avocado, Cilantro or Sour Cream
