Caramel Apple Crepes

Ingredients
2 large apples1/2 c. whole wheat flour1/2 c. Splenda1/2 c. egg beaters 1/2 c. skim milk1 tsp cinnamondash salt2 tbsp lite non- dairy whipped topping2 tsp chopped nuts1/2 tsp vanilla2 tbsp Smuckers fat free Caramel ice cream toppingSucralose sweetner to taste
Directions
Peel, core and slice apples. Cook on stove top with 1/2 tsp cinnamon, 1/4 c. water and sweetner to taste (I used 1/2 cup), until tender.
While apples are cooking, mix flour, egg beaters, milk, salt, remaining 1/2 tsp cinnamon, vanilla and 1/4 c. Splenda. Mix thoroughly and cook on hot griddle or skillet, sprayed with cooking spray. Spread out batter to make 4 thin crepes. Flip when edges are dry. Crepes are done when dry but not brown. Add 1/4 of cooked apples in each crepe, Roll crepes, drizzle caramel topping over each and top with non-fat whipped topping. Dust lightly with cinnamon.
