Chrissy's Chicken Soup

Ingredients
1 large onion chopped8 large stalks celery, chopped8 large carrots, chopped1 fryer chicken whole (leave skin on for now)1 box Orzo or Ditalini pasta1 gallon of water...make sure to cover chicken
Directions
Clean chicken well and set aside.

In lage stock pot add a few sprays of cooking spray, add onions, carrots & celery simmer about 5 minutes, then add about a cup of water, let simmer and steam for about 15 minutes. Add chicken and water cook on low for about 2 hours covered. Turn off and let set till cool enough to put in refrigreator. Let set over night so the fat all rises to the surface. Next morning, skim all fat and take chicken out remove all the skin, and then break chicken into pieces, add to pot. Boil a pot of water and cook the orzo or ditalini al dente, add to soup pot and heat soup through. We serve ours with a few sprinkels of parmasean cheese and fresh ground pepper.
