Baked Chicken and Rice with Black Beans

Ingredients
10 oz package yellow rice1 cup chopped onion.5 cup chopped green pepper.5 cup chopped carrot1 tbsp olive oil2 cups cubed cooked chicken1 15-oz can black beans, drained1 10 oz can diced tomatoes and green chiles, undrained2 cups shredded cheddar
Directions
Preheat oven to 350 degrees.
Prepare rice per package.
Saute onion, bell pepper, and carrot in hot oil on a medium skillet over medium heat for 10 mins or until veggies are tender.
Combine cooked rice, onion mixture, chicken, beans, diced tomatoes/chiles, and 1.5 cups cheese in a large bowl.
Spoon into lightly greased 3 qt baking dish and sprinkle with remaining cheese.
Bake for 30 mins covered.
Uncover and bake for 10 minutes.
