Potato and Mushroom Soup

150g pork, 800g water, 200g cooked or salted mushrooms, 400g potatoes, 30g onion, 30g tomato puree, pepper, bay leaf, salt, 3 Tbs sour cream (reduced fat), green onions, 1 Tbs butter
Cut up the pork into cubes. Brown the pork in butter. Chop mushrooms and onions and add them to the pan, along with the tomato puree. Stir. Cook the mixture for 10 minutes. Boil water seperatly and add it to the pan. Peel and dice the potaoes and add them to the soup along with the salt, pepper and bay leaves. Simmer until the potaotes are cooked. Before serving sprinkle chopped green onions to the soup and add the sour cream.
