LOW-FAT CHICKEN & DUMPLINGS

Ingredients
1 Boneless skinless chicken breast (can use up to 3 breasts, will need to recalculate)1 can low-fat chicken broth1 can low-fat cream of chicken soup1 soup can water1 T. low-fat margarine4 8" flour tortillas, cut in 1/2" strips salt & pepper to taste
Directions
Over low heart, cut chicken into bite-sized pieces and cook in chicken broth until tender. Remove chicken when done, put to one side.

Add margarine, soup & water to the broth and bring to a boil.

Add tortilla strips & stir until softened.

Add chicken pieces & simmer for 20-30 minutes.

Makes 8 1-cup servings
