Simple Savoury Chicken Soup

1 box of organic chicken broth2 boneless, skinless chicken breasts (diced into 0.5 inch pieces)1 cup of diced carrots (or less)1 cup of diced celery1/2 c. orzo pasta1 medium onion, diced1 clove garlic (minced)1 T. ginger root (minced)Salt and pepper to tasteFresh or dried thyme (optional)
1. Heat olive oil in medium sized pot and add chopped onions, minced garlic, and minced ginger. Stir and keep an eye on it so that garlic and ginger doesn't burn.
2. After about 2 min. add carrots and celery.
3. Add diced chicken breast. Cook until no longer pink (about 2 min.).
3. Add chicken broth, cover and bring to a boil.
4. Add orzo and simmer (without lid) until pasta is cooked al dente (about 5 min).
5. Serve hot!
