1 large onion1 small turnip1 clove of garlic2 tbsp of olive oil2 yellow (summer) squash2 baby zucchini1 green pepper1 jalapeno pepper2 roma tomatoes1 tbsp of marjoram1 tbsp of basil
Chop the vegetables into appropriate size pieces. They shouldn't be too small, except for the jalapeno and turnip. Larger pieces like slices are generally better
Heat the olive oil in a pan. Add the slice onion, garlic and turnip and sautee for 5 minutes.
Then add the sliced zucchini, squash and peppers. Sautee again for around 5 minutes.
Then add the tomatoes (sliced) and the marjoram and basil.
Serving Size: 8 servings of about 1 ccup
