Sweet and Spicy Vegetarian Curry

Ingredients
1 onion2 cloves garlic1 inch piece ginger root1 tbsp olive oil2 medium yams1 head cauliflower1 15 oz can of chickpeas1 med apple1/2 cup raisins1/2 orange juice2 cups water1 cup chiken stock3 tbsp (or to taste) curry powder1/2 tbsp hot red pepper flakes
Directions
makes 6 2 cup servings.

Soak raisins until plump and soft in orange juice.

Saute onion, garlic, ginger and yams in oilve oil until just tender.

Add cauliflower, chickpeas, apple and raisins with orange juice.

Add water and chicken stock, curry powder and red pepper flakes. Bring to a boil with lid on. remove lid and let simmer until all vegetables are cooked.
