Chicken Salad Stuffed Avocado

Ingredients
2 Chicken Breasts, boneless/skinlessCelery, 3 stalksFresh Chives or Green Onion, 3 tbsp choppedLemon Juice, 2 tbspCilantro, half tbspsalt & pepper to taste2 Avocados, halfed, seed removed
Directions
Cook chicken. Personally, I like to make this when I am making chicken soup. I cook the chicken in the pressure cooker with onion and garlic to make mysoup base. I usually pull some of the cooked chicken out for another meal.

Chop or shred the cooked chicken, celery and chives. Mix in a bowl with the other ingredients and refrigerate for at least an hour before serving.

Fill each avocado half with chicken salad and serve chilled.

This also works well by substituting tomatoes for the avocado.
