Vefetable-over stuffed pork chops

1 can of Yellow Sweet Corn, Canned1/2 c Green Peppers (bell peppers)1/2c Onions1c Hungry Jack Mashed Potatoes1/2 c White Rice, long grain3/4 tsp Salt1tsp black pepper1teaspoon dried oregano leaves4 thick cut pork chops, trimmed of fat1/2 tsp ground cumin1c picante sauce
Combine corn, bell pepper, onion, mashed potatoes, rice, 1teaspoon dried oregano, salt and pepper in a medium bowl. Toss to lend. Stuff each pork chop with about 1/2 cup mixture. Sprinkle with ground cumin.
Lightly coat crock pot with cooking spray. Place remaining veggie mixture in bottom of slow cooker. Arrange pork chops over mixture. Pour Picante sauce evenly over chops. Cover and cook on low for 4.5 to 5 hours until tender.
Remove chops from crock pot. Spoon veggie mix over rice, and place chops on top.
