garlic mashed root vegetables

Ingredients
1 large sweet potato2 medium potatoes (about equal to the amount of sweet potato)1 cup chopped carrots1/3 cup skim milk1/2 stick unsalted butter1/2 tsp garlic salt * (or to taste)
Directions
Peel and cut up potato, sweet potato, and carrots. Cover with water in a saucepan. Bring to a boil, then cover and turn down to a simmer for about 30 minutes or until soft (the smaller you chop the ingredients, the less time it takes them to soften). Drain water, add skim milk and butter and garlic salt (to taste) and then mash.

Serving Size: Makes 10 0.5-cup servings
