Dark Chocolate Coconut Mini Baked Oatmeal

Ingredients
1 Medium Banana, mashed2 tsp Vanilla Extract2 cups Unsweetened Applesauce2 eggs12 packets Truvia5 cups Old Fashioned Oats1/4 cup ground flaxseed3 tsp baking powder1 tsp salt1 tbsp ground cinnamon2 tbsp Hershey's Special Dark cocoa powder2 3/4 cups skim milk3/4 cup Hershey's Special Dark Chocolate chips3/4 cup shredded coconut
Directions
Preheat oven to 350 degrees.
Mix banana, vanilla extract, applesauce, eggs and Truvia in large mixing bowl.
Mix in oats, flax, cinnamon, baking powder, salt and cocoa powder. Stir and fold until well mixed.
Add milk and combine.
Mix in chocolate chips and coconut.

Line mini cupcake pan with paper liners.
Spoon 1 rounded teaspoon in to each liner.
Bake for 20 minutes.

Enjoy them warm or freeze them for later!
