Spinach & Sausage Baked Pasta

Ingredients
1/2 cup Parmesan cheese, shredded 6 oz fat free ricotta cheese1/2 cup fat free mozzarella cheese, shredded 3/4 lb turkey sausage, cooked & drained3 cups low carb rigatoni pasta 1 tsp olive oil 2 cloves garlic, chopped 1 1/2 cups baby spinach, choppedsalt and fresh pepper to taste 3 cups Marinara Sauce
Directions
1. Preheat the oven to 375 degrees. Lightly spray a 9x13 baking dish with cooking spray and set aside.

2. Bring a large pot of lightly salted water to a boil. Cook pasta according to package instructions for al dente 4 minutes, these need to be under cooked as they will finish cooking in the oven. Drain and return to pot.

3. In a medium bowl, combine the ricotta, 6 Tbsp of Parmesan cheese and half of the mozzarella cheese.

4. Meanwhile, in a large skillet add the oil and saute garlic one minute, careful not to burn. Add spinach and season with a little salt and pepper and cook one more minute. Add the cooked sausage to the skillet and add the marinara sauce; cook on low about 3 - 4 minutes.

5. Put half the pasta into the baking dish and top with half of the sauce. Spoon the ricotta mixture on top of the sauce in an even layer. Cover with the remaining pasta and the remaining sauce. Top with the remaining mozzarella and Parmesan cheese and cover tightly with foil

6. Bake for 20 minutes. Remove foil and bake for an additional 7 minutes or until the mozzarella is melted and the edges are lightly browned.

    We liked this a whole lot. It's easy to prepare. We did expect the cheese to melt, but it didn't and we had spoonfuls of cheese over the top instead of a topping of melted cheese like we expected. Still good eating! I will make this again but I will add two packages of spinach next time. - 12/21/15
