Fruity Oatmeal Pancakes

Ingredients
2.25 cups white flour.5 cup oatmeal1 tsp. salt4 tsp. baking powder2 Tbs. sugar2 eggs1.75 cups rice milk.25 cup oil1 tsp. vanilla1 tsp. cinnamondried fruit - cherries, blueberries, cranberries
Directions
Pre-heat griddle to 375F. Beat eggs. Add rice milk, oil and vanilla and beat well. Add flour, oatmeal, salt, baking powder, cinnamon and sugar to egg mixture and beat well. May need to add more milk or flour to thin or thicken the batter. Ladle batter onto griddle. Sprinkle each cake with dried fruit. Turn when pancake has solidified enough to turn easily and is golden brown on bottom. Makes 12-15 pancakes.
