Samir's Chipotle Pork Chili

1 lb cooked boneless pork loin - shredded1 cup onion, chopped1 cup mushrooms, chopped1 tsp minced garlic1 1/2 cups tomato sauce2 chipotle peppers, chopped fine1 Tbsp chili powder1 tsp salt1 Tbsp canola oil
1. In a large, deep pan or pot, sweat the onions and mushrooms together in the vegetable oil on medium-high heat until softened.
2. Add garlic and cook for 1 minute.
3. Add the chipotle peppers, chili powder, salt and cook for another minute to bloom the spices.
4. Add the tomato sauce, shredded pork and beans and bring to a boil, then reduce to simmer for 20-40 minutes, stirring every few minutes. The longer you cook the chili, the more intense the flavor.
Serve with rice or pasta and a good, hearty bread.
