Chicken Salad Dairy-free egg-free

Ingredients
2 Boneless Skinless Chicken Breasts, cooked and diced1/2 sweet onion, diced and sauteed3/4 cup cashews1 cup cooked (not from a can) garbanzo beans1 cup tap water2 spears celery, diced1 can olives, drained and dicedsalt to taste
Directions
Soak 1/2 cup cashews in water for about 4 hours to soften. Blend with drained garbanzo beans and 1/2 of onion. Place in bowl with chicken, rest of the onion, celery and olives. Salt to taste
