Mike's Fish Curry

Ingredients
16 oz of Tilapia filets cut into smaller pieces1 large red onion diced3 large carrots grated2 tbsp of clarified butter3/4 cup of curry powder1 tbsp of cayenne pepper1 tsp of powder cloves1 dried chili pepper cut into small pieces2 cloves of garlic cut into small pieces1 tsp of salt
Directions
Melt the butter on medium heat in a large frying pan.
Then add the diced onions, garlic and curry powder, and cayenne powder and cloves.
Stir and let cook a bit.
Then add the grated carrots. stir into the mixture.
Then add the fish and stir. Add a little water to have some sauce. Cover and let simmer for 5 minutes.
Remove cover add salt, turn to lower heat and allow to simmer until the fish is fully cooked. Be sure to add enough water to keep a small amount of sauce in the pan.

Serving Size: makes 5 servings of 1-cup
