Raspberry & Walnut Oatmeal Pancakes

Ingredients
1/2 cup white flour1/2 cup oatmeal, dry2 tbsp brown sugar1 tsp baking powder1/2 tsp baking soda1/4 tsp salt2 tbsp white vinegar3/4 cup 1% milk1 large egg1 tbsp light olive oil1 pint / 170 gram raspberries1/4 cup walnuts
Directions
1. Combine vinegar with milk and set aside to thicken.
2. In a large bowl, mix together flour, oats, brown sugar, baking powder, baking soda and salt.
3. Whisk egg and olive oil into milk mix and combine with dry mix.
4. Add raspberries and walnuts.
5. Light spray a pre-heated frying pan with non-stick spray and drop by the 1/4 cup. Flip when the bubbles in the pancake pop and don't re-fill with batter.
