Ingredients
1 cup uncooked quinoa, well rinsed 2 cups water 1/2 cup sliced red onion 2 Tbsp lime juice 1 15-ounce can black beans, drained and rinsed 1 can corn, I cup chopped tomatoes, 1 jalapeņo, seeded and finely chopped 1/4 cup chopped cilantro 3 Tbsp olive oil S&P
Directions
Prepare Quinoa according to package directions. Let cool

While the Quinoa is cooking, chop up onions and soak in lime juice. Put beans and corn in bowl, add tomatoes and jalapeno, Mix oil with onions and lime juice, add to bean mixture. Add cooled quinoa and mix, ad salt and pepper.
