Heart healthy Tarragon salad dressing

Ingredients
2 TBSP dijon mustard2 TBSP fresh lemon juice*zest of half a lemon (optional)1 TBSP light mayonnaise.75 tsp dried tarragon, crumpled to release its smella few grindings of fresh pepper.5 cup olive oil.5 cup orange juice
Directions
In a large bowl, whisk together the mustard, lemon juice & zest, mayo, tarragon & pepper.

Gradually whisk in the olive oil in a steady stream, then do the same with the orange juice. Done.
Store in the fridge.

Salad dressing tip: Instead of putting dressing on the table, toss the salad beforehand. Choose an extra-large bowl, and pour in 1 TBSP of dressing - or more, depending on how many the salad is feeding. Tip the bowl to coat the inside with dressing and THEN add the salad, tossing to coat. I bet you`ll find that you use less and that your salad still tastes great.
