scrambled eggs with veggies

Ingredients
2 eggs1/2 cup skim milk2Tbsp chopped green pepper2Tbsp chopped onion2 fresh mushrooms chopped1/2 cup shredded low fat cheese1 slice of lean ham, chopped (optional)
Directions
Spray frying pan with cooking spray. Heat on medium heat. Beat eggs in bowl with fork and add milk. Add to frying pan. Cook for 2min then add green peppers, onions, mushrooms, and ham. Cook until eggs is cooked through and veggies are soft. Add cheese to top and let melt.
Makes about one 1.5 cup serving.

    I left out the ham. I wrapped the cooked egg mixture in a tortilla shell and added salsa and ff sour cream. Very filling. - 1/6/09
