Scottish Oat Cakes

2 cups of stone ground oats (or steel cut, but stone ground works better).2 tsp maple syrup1tsp kosher salt1/2 tsp bicarbonate of soda2 Tbsp lard or bacon fat6 Tbsp boiling water
Process stone ground oats, maple syrup, kosher salt and bicarbonate of soda for 3 minutes in food processor. Add lard (or bacon fat), add boiling water x6 Tbsp, blend. Rest. Add water and mix as necessary. Roll half dough to 1/8 inch thickness. Cut 3 inch rounds and place on cookie tray. Use wax paper to roll out. Do same with second half of dough. Fill 2 cookie trays. Bake @ 350 for 10 minutes. Turn over and bake 5 minutes. Allow to cool.
