Florentine Breakfast Pizzas

Ingredients
2 cups Liquid Egg Whites3 English Muffin-Ezekiel Cinnamon Raisin, toasted1/4 C Onions, chopped3 cups Spinach, fresh3 Slices Crispy Bacon, crumbled1/2 C Low-Fat Cheddar, shredded
Directions
Saute onion, add egg white & scramble. Mix in spinach, cheddar and bacon. Top English muffins with egg mixture.

Serving Size: makes 3 servings (each serving is 1 whole english muffin about 1 cup egg mixture)
