CAM's Slow Cooker Mexican Beef

1½ c turkey broth, low fat and no salt added1 onion, chopped5 cloves garlic, minced1 TBS cumin½-1 tsp chili powder to taste1 can green chilies. chopped8 oz Salsa Green Mountain Mild1 sm can diced tomatoes no salt added4 # bottom round roast1-2 TBS olive oil to brown3 medium red potatoes, cubed16 oz frozen veggies
Place 1 c broth, spices, green chilies, onion, tomato, potatoes, salsa in crock pot on high.
Cut beef into cubes and brown in oil. Add to crock pot.
Add remaining broth to skillet to remove bits attached to skillet. Add to crock pot.
Reduce to low and cook for 6-8 hours. Meat will be tender after 4 hours.
Add frozen veggies at end for about 20-30 minutes until heated through.
