No Crust Spinach Quiche

1/2 a cup flour4 med eggs1/2 cup cheese2 cups chopped spinach1 tbsp of black pepper1 cup 2% milk
1)Heat Oven to 375
2) Spray muffin tin with non-stick
3)Steam spinach with 1/4 cup of water in a pot on the stove (10 minutes), or in a covered container in the microwave for about 7 minutes
4) While spinach is steaming, mix eggs, flour, milk and pepper in a bowl and wisk well.
5) Add mix to spinach once it is done cooking and mix well, add a little milk if mixture is too thick.
6) Spoon or ladel out even portions filling each muffin cup nearly to the top
7) top with shredded cheese
8) Bake in oven for 30 minutes, then let stand for 5-10 minutes
