Slice apples - layer on the bottom of crockpot. Sprinkle cinnamon over them. Slice pork every inch or so, drizzle honey in slit and place an apple slice in each cut. Put pork in cooker and place remaining apple slices on top. Drizzle remaining honey on top and sprinkle with cinnamon. Cook on low for 6-7 hours.
