Curried Cauliflower and Chick Peas

Ingredients
1 onion, chopped2 T curry powder1 T powdered ginger1 can diced tomatoes1 head cauliflower, chopped2 cans chick peas2 T tomato paste
Directions
Cook onion, curry powder and ginger until onion is soft. Add a little olive oil or water if it's dry. Add tomatoes and cook 6 minutes; add cauliflower, chick peas and tomato paste. Add 1 cup water. Simmer, covered, until cauliflower is tender, about 15 to 20 minutes. Uncover and cook out excess moisture and cauliflower is coated with thick gravy. Season to taste.1
