Fresh Apple Muffins

Ingredients
Muffins:2 cups whole wheat pastry flour1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1/2 cup applesauce3/4 cup brown sugar2 eggs1/2 cup water1 1/4 tsp. vanilla2 cups chopped apples (2-3 medium apples)Streusel Topping:1/4 cup brown sugar1 Tbsp. flour1/2 tsp. cinnamon1/4 cup oatmeal (rolled oats)
Directions
Preheat oven to 375 degrees F. Grease or line muffin tins with muffin papers. Mix together first 4 dry ingredients (flour through salt). In separate bowl, mix together applesauce, 3/4 cup brown sugar, eggs, water and vanilla. Stir into dry ingredients just until moistened. Stir in chopped apples. Fill greased or paper-lined muffin tins 2/3 full with batter. In small bowl mix together 1/4 cup brown sugar, flour, cinnamon and oatmeal. Sprinkle evenly on top of muffin batter. Bake at 375 for 20 minutes or until toothpick comes out clean.
