Ingredients
1 tbsp olive oil2 cloves garlic chopped1/2 medium onion sliced1 1/2 cups carrots1 long stalk celery1/2 medium tomato chopped in big pieces1 boullion cube1 1/2 cup lentils
Directions
sautee garlic & onion in olive oil
add about 5 cups of water
add all the other ingredients
let boil / simmer for 45 minutes
add water periodically if lentils look dry

* this should make about 5 servings

    This was an easy recipe and I used it as a side dish with chicken and spinach. As a side dish, it was 1/2 serving per person. I added some spices: thyme, oregano, parsley, cumin, salt and pepper to taste. - 1/9/11

    This was a very easy to make recipe. It was a little bland, and I had to add spices to make it more flavorful. - 2/22/08
