Warm Cauliflower Salad

Ingredients
1 large head of cauliflower2 tbs of extra virgin olive oil1 medium red onion1 1/2 tablespoons of balsamic vinegar (or wine vinegar)2 tablespoons honey1/4 cup raisins, packed2 tablespoons chopped parsley1/4 cup slivered almonds, lightly toasted1 cup of fresh spinach
Directions
Heat oven to 400F/200C/gas mark 6. Toss the cauliflower with the olive oil, season and roast for 20 mins. Stir in the red onion and carry on roasting for 20 mins more until tender.
While the cauliflower is roasting, mix the vinegar, honey, raisins and parsley.
When the cauliflower is done, stir in the dressing, almonds and spinach, and serve.
