Tina's Lentil Soup

Ingredients
24 oz lentils, dry1 cup diced carrots1 cup diced celery 1 cup onions diced3 tbsp olive oil1-1/2 cups fat free chicken broth1 tbsp garlic powder1 tbsp salt (to taste)1 tbsp black pepper (to taste)1 lb ham steak cubed13 cups tap water, approx.
Directions
Heat olive oil in large soup pot.
Place carrots, celery, onions, & ham steak into oil and cook until tender.
Mix in seasonings.
When tender, add 6 cups water and bring to boil.
Add chicken broth.
Simmer, (taste, you may want more seasonings added).
Add lentils to water, and bring to boil.
Cook on medium heat until thick.
Add extra water as lentils begin to thicken, and stir (A LOT).

    Even better the next day. I think I would add the ham at the end next time for added flavor. I added some part-skim mozzarella to the top when serving. - 1/3/11
