Chicken Marsala with Mushroom Mustard and Mascarpone Sauce

1.5 lbs chicken breast or tenderloins2 tbsp butter3/4 cup chopped onions2 garlic cloves minced3 cups sliced mushrooms1 cup marsala wine or marsala cooking wine4 oz mascarpone cheese1 tbsp dijon mustard
Preheat oven to 375 degrees. Place chicken in a baking dish lined with tin foil. Place in oven and bake for approximately 25-35 minutes (or until cooked through at 170 degrees).
In a large skillet melt butter or medium high heat. Add onions and saute for approximately 2 minutes until translucent. Add mushrooms and garlic, saute until the mushrooms are tender and juices are cooked out (about 12 minutes).
Add marsala wine and simmer until reduced by 3/4. Stir in Mascarpone cheese and mustard until melted and blended in.
Serve sauce over the cooked chicken. Goes well with steamed veggies.
