Black Bean & Mushroom burgers

Ingredients
1 15 oz can black beans, drained and rinsed1 cup Baby Portabells Mushrooms, sliced1/2 cup Sweet bell pepper, chopped1 cup Panko bread crumbs1 cup Parmesan cheese, grated1 egg1 tsp Lawreys Salt1/2 tsp black pepper, fresh grind2 tbsp Grape Seed Oil1 cup panko bread crumbs for breading burgers
Directions
Put drained black beans and mushrooms in food processor and process for about 30 seconds. Add egg and bell pepper, and process until smooth. Add Panko bread crumbs, parmesan cheese, salt and pepper. Continue to process until well blended. Add more bread crumbs if too thin to form burgers.

Form into four burgers, dredge in additional panko bread crumbs.

Add oil to skillet and heat, add burgers and fry until browned 3-4 minutes, turn and brown the other side.

Serve on buns with sliced tomato, spinach, vegenaise and brown mustard.
