16 oz Bone-In Pork Chop, about 1-1/2 inch thick2 TBS bleu cheese, crumbled1/4 c Kalamata olives, chopped4 sun-dried tomatoes, chopped1/4 leek, white part, chopped
Preheat oven to 350 degrees.
Lightly saute chopped leeks in ovenproof skillet that was sprayed with cooking spray; stir together with bleu cheese, olives and sun-dried tomatoes.
Cut pocket into pork chop. Sprinkle pocket with S&P. Fill with stuffing mixture. If necessary, secure closed with toothpicks.
In ovenproof skillet, brown both sides of pork chop; cover with foil and put into 350 degree oven for 30 minutes. Let rest under foil for about 10 minutes; cut in half and serve.
