Couscous w/ Apricots & Pine Nuts

Ingredients
1 1/2 c dry couscous (3 c. cooked)1/2 yellow pepper, chopped1/2 c dried apricots, chopped1/4 c golden raisins1/4 c pine nuts, toasted------2 Tbsp chives, chopped1 garlic clove, minced2 limes, juice only1 tsp ground cumin1 tsp ground coriander2 T olive oil2 T cilantro, chopped
Directions
1- Cook couscous per directions, using water only (i.e. no oil), while cooking...
2- Toast pine nuts in saucepan, use PAM or similar
3- Mix all ingredients from chives onward
4- Chop pepper & apricots and stir together all ingredients

Serve warm. Serves 6
