Quick & Dirty Veggie Beef Soup

Ingredients
spritz of Pam / canola oil / olive oil1/2-1lb ground beef or turkeycan of black beans, drained and rinsedcan of mixed vegetables, drained OR frozen mixed vegetables OR bothcan of Rotel or other seasoned tomatoesbig can of tomato juice (46 oz or so)1c frozen pepper/onion blendseasoning of your preferencewater, if necessary, to thin
Directions
Spray bottom of pot with Pam and sautee frozen pepper/onion mix. Add ground beef; brown and season with garlic powder, seasoning salt, or other preferred seasoning. Add frozen vegetables. Drain and rinse canned black beans and mixed vegetables and add to pot. Dump in tomatoes/rotel/whatever with its juices. Add tomato juice. Thin with water if necessary and salt/pepper to taste. Allow to simmer until heated through and seasonings are melded.
