Spinach, fresh, 1 poundEgg Noodles, 8 oz Lemon juice, 1/4 cup (best from a fresh lemon)Salt, 1/4 tsp Parmesan Cheese, shredded, 4 tbsp Olive Oil, 2 tbsp
Boil pasta as directed on package. In the meantime, heat olive oil in large pan. Add spinach and cook until wilted (about 2 minutes) - stirring all the while. Add lemon juice and salt and stir again. Stir in noodles. Toss with parmesan cheese and serve. (1 1/2 c. per serving).
