Easy Spicy Black Bean Soup

Ingredients
2 Tbsp olive oil1 1/2 cups chopped onion2 cloves garlic, finely chopped1 cup chopped green bell pepper1 cup chopped red bell pepper1 Tbsp cumin1 tsp cayenne pepper6 cups low sodium veggie or chicken stock2 cans no-salt-added black beans, drained and rinsedSalt & pepper, to tasteGarnishes (optional - not included in nutrtional info)Fat-free cheddar cheeseFat-free sour creamChopped red onion
Directions
In a large heavy pot, heat oil over medium heat. Add onion, garlic, and peppers, and cook until tender, about 5-8 minutes.

Stir in spices and toss to coat vegetables. Pour in stock and beans and bring to a boil. Reduce heat and simmer for 15 minutes.

In a blender (or with an immersion blender), puree half of the soup until smooth and stir back into the soup pot. Serve hot with garnishes, if desired.
