Orange Chicken Stir Fry

Ingredients
2 boneless, skinless chicken breastsSalt, dashBlack Pepper, dash4 runner beans, chopped1 stalk celery, sliced1/2 bell pepper, chopped1/2 red chili pepper, sliced1 clementine, segmentedzest from clementine1 tbsp corn starch1/3 tsp fresh cilantro1 clove garlic1 tsp light soy sauce1 tbsp honey
Directions
Cook rice according to package. Cube chicken and lightly cover with cornstarch, and sprinkle with salt and pepper. Brown chicken in well-seasoned wok or skillet over high heat with olive oil (5-10 minutes). In a small bowl, combine ginger, chili, orange zest, honey, soy sauce, and garlic. Pour in 1/2 cup boiling hot water, and let steep. Once chicken is finished, add in water mixture and let simmer for about 3 minutes until sauce thickens. Add vegetables and allow to heat through, about 5 minutes. Serve chicken mixture over rice.
