Crock-Pot Potato-Cheese Soup

4 4-ounce potatoes, diced4 slices of bacon, cooked, drained, and diced1 small onion, chopped2 celery stalks, chopped1 carrot, shredded2 tbsp fresh parsley, chopped1 tsp paprika (or to taste)4 chicken bouillon cubes, dissolved in4 cups of water1 cup non-fat milk2 tbsp cornstarch1 C fat-free cheddar cheese, shredded1 C cheddar cheese, shredded
Place all ingredients except milk, cornstarch, and cheeses in crockpot, set on low, to cook all day.
10 minutes before serving, add cheeses to pot, and stir cornstarch into milk, then add to pot. Allow to cook for 10 minutes.
