Vegan Coconut Chickpea Curry

Ingredients
Spices to taste:GarlicTumericCuminSaltCurry PowderIngredients:1 medium onion2 Tbsp coconut oil1 can coconut milk1/4 cup cashews1 chopped leek2 diced sweet potatoes1 head broccoli1 can precooked chickpeas2 cups cooked brown rice
Directions
Put coconut oil in a pot and roast the onion, garlic, and leek. Add spices and stir it for some minutes until in begins to turn brown. Add sweet potatoes , broccoli, and cashews. Stir well. Add can of coconut milk and 1/2 cup water. Simmer for about 20 minutes. Add can of chickpeas and the rice and stir. Continue to simmer for an additional 5 minutes.
