Cashew Chicken

4 oz. cashews20 oz. sliced chicken breast (raw or cooked)1 tbsp. minced garlic1 large bell pepper, diced3/4 cup chicken broth2 tbsp. Hoisin sauce2 tbsp. cornstarch1/2 tsp. crushed red pepper flake8 green onions, diced1 tbsp. vegetable oil
Heat the oil in a wok over medium-low. Add the garlic and cashews, and saute for 5 minutes, stirring frequently.
Add the bell pepper and chicken (if using raw), turn the heat to medium-high, and saute an additional 10 minutes, or until the pepper softens and the chicken is cooked through. (If using cooked chicken, add it 5-7 minutes after adding the pepper)
Whisk together the starch, Hoisin, and broth, and pour over the chicken and veggies. Add the pepper flake and scallions, and cook until the sauce thickens.
Serve over brown rice or, better yet, spaghetti squash.
